Are you looking forward to a beautiful weekend as much as I am? I certainly am excited and thankful about the beautiful weather, and the upcoming fun activities here at the wine bar.
I am also especially thankful for all the wonderful support we receive from you, all of our guests, and especially our team here at Steve’s! The fun and great experiences we have had over the last 10 months here at the new location have been very special. Karen and I were speaking about this last night with a few people at the UNT One O’Clock Lab Band concert about how, at times, we feel completely unworthy of the growing success that has been created here in Denton. We can always say thank you to you for being part of our project, but I am sure we don’t express how deeply that thankfulness goes in our hearts. Thank you for believing in us as well as supporting us as we continue to try new things and of course new wine here at Steve’s.
I wanted to send you an email about some upcoming events here at Steve’s over the next week and some highlights of weeks to come.
Tonight at 8:30pm we have the Friends4 Band with Vocalist Natalie Gandy. And a special birthday gathering for our friend Angela!
Tomorrow 3pm we have our Dance and Wine Specialist, Cher, teaching a dance class focusing on the Merengue. I don’t know what memory or vision this brings to your mind….but I think of the movie Dirty Dancing when I hear Merengue. The class starts at 3pm and runs to 5pm. $35 per person includes the lesson and a glass of wine (or beer)! Tickets are on sale at steveswinebar.com.
Saturday evening we have a quiet night without music. Yes, even on a Saturday night, it’s nice to offer a bit of down time for our club members and guests to kickback and simply enjoy an evening with friends and good conversation.
Sunday afternoon at 1pm we are hosting the Denton Benefit Leagues annual Tea. This will be the first time at Steve’s, and we hope that everyone enjoys the gathering and the specials on Mimosa’s, Bellini’s and other sparkling sippers….and of course the tea.
Sunday evening at 6pm we have our first ever Trivia Night lead by the our very own Kylie Macentee, also known worldwide as Midnight Lucy. So, if you are in the mood for some trivia fun, come on down and join the party.
Looking at the first week in March we have a couple more “quiet nights” for our guests on Tuesday and Friday, then we go into the rest of the month with music every night! The list of music events is long, but a few you should be aware which are unique are:
Saturday March 7th we have two shows that evening with our special guest, bassist Eddie Gomez. Rather than a cover charge, we are selling tickets to each show. They are $15 a person to be up close and personal with Eddie, Ed Soph, and Stefan Karlsson. Or if you wish to stay the entire night, tickets are $25. We anticipate the seats will sell out, so get your order in now. You can purchase your tickets online today!
Starting on Monday March 16th and then the following three Mondays, we are hosting the UNT Jazz Combo Concert series. This is a special night to come in and hear some of the best jazz talent UNT has to offer. Each night will start at 5pm (doors will open at 4pm) and you will experience 4 jazz combos performing 20-30 minute sets of music. The event will wrap up before 8pm and we will close up for the evening by 9pm. The events are free to attend. If this interests you, please mark your calendar for March 16th, 23rd, 30th and April 6th. All concerts will run 5-7:30pm.
Also in March, on Saturday the 21st, we are doing a special musical tribute to Lyle Mays, who recently passed away. Lyle was an 11-time Grammy award winner pianist, wrote and arranged nearly all the music with the great Pat Metheny Group, and of course is one of the most recognized UNT Jazz Alumni. The event will start at 8pm and run through 10:30pm. We will have several special guests sitting in throughout the night along with special video tributes from others who cannot make it back to Denton for this event.
Thursday, March 26th, 8 – 10pm, one other special event we will be hosting in March will be a performance by trumpet player Mike Steinel and his quintet. Mike and his band are recording a new CD. While a few of his band members are in town from other parts of the country for the recording session we will host them that evening for this special performance.
As I mentioned earlier in the email, there is a lot of music happening here in March, with music every night beginning on the 10th. Stay tuned for all of the events as we post those online at steveswinebar.com and on our Facebook page.

Happy Presidents’ Day!
What a fantastic day it has been here in mid-February. We hope you had a chance to be out in this beautiful weather and are excited for the week ahead (even though it chills back down to the 50’s).
This last weekend was a blast starting on Thursday with Galentine’s Day followed by Valentine’s Day. We were presenting red roses along with our special chocolates for those in attendance enjoying some wine. We had stocked up on the chocolates, both on the individual and the six packs, so we still have plenty available for people to enjoy.
Saturday was the Grand Premier of our new piano. The house was packed with people, many of whom we have never seen before. That was likely due to the nice article the Denton Record Chronicle did on Thursday about Dave Meder and our new piano.
Of course how can leave out our fun Sunday night performance with our Mosaic Band from FUMC of Denton. Everyone had fun with the wide array of music we played and once again, the house was packed. We truly appreciate all those who are coming out to enjoy the live music.

Gloomy Sunday....
Come to Steve's this evening to lift your spirits on this gloomy Sunday afternoon for a bit of Tango with Cher at 6pm.
Today @ 6pm – Do you want to Dance? Our first ever Dance Class will take place with Cher Anabo teaching the basics of the Tango. This will be a series of 2 hour classes to be held over the next several weeks. $35 a person which includes the class and a glass of wine or beer! Tickets are limited (20 per session) and are available online at our website and in the bar. Other dates for the dancing are Feb 22 and 23 and the 29th. Tickets will be available online for these additional dates beginning February 11th.
Wear comfortable clothing and shoes that allow you to "slide" a bit (no rubber soles).

Happy February!
We hope you had a Great Super Bowl Weekend and your team was the superior one which took home the all-important Vince Lombardi trophy! We had a nice time at the bar with several people bringing food to share and to enjoy the game together.
We have a lot of news to get to so I’m going to dive in.
Music this week and other fun activities to put on your calendar include:
Tonight – Ginny Mac at 8pm. As we have so many people asking to reserve tables, we will not be doing any reservations for tonight's performance. In the months to come we will have a handful of Reserve Seats available to purchase online. So be on the lookout for that. It will start in March.
Wednesday 8pm – The Premier of our new baby grand piano will take place with the Jeffry Eckels Trio with Dave Meder on Piano.
Thursday 8pm – Dave Meder is back with his trio for a second night of showcasing the new piano.
Friday 8:30pm – Scotty Bucklin and his trio will perform. He is excited to get to play on the new piano!
Saturday 8:30pm – The Friends 4 band with Natalie Gandy on vocals.

Tuesday Feb 11th, we have Mister Joe (Pinson) performing his original music at 8pm with Jeffry Barnes and Steven Heffner.
Music is also planned for Wednesday, Feb 12th, with Jeffry Eckels and on Thursday, Feb 13th with Davy Mooney.
Also on Thursday the 13th – it is officially Galentine’s Day. Gals, gather your best girlfriends together and celebrate the awesomeness of the ladies in your life. We will have some special treats and pricing on wine for you.
Friday the 14th is Valentine’s Day and we will be hosting live music, and to help make the evening extraordinary, you will receive a very special chocolate and a rose with your glass of wine.
Saturday the 15th is another special evening of music starting at 7pm with the UNT Jazz Faculty performing. They are helping with a fundraiser for the new baby in house and the cover charge and tips during their 7 – 8:30 session will go to the piano fund.
At 8:30 that same evening we have vocalist Marion Powers joining us with her quartet. And as the evening plays on, we will likely see some of the UNT Jazz Faculty join in the fun for the later set. (There will be a second cover charge to go to Marion’s group at 8:30)
And finally…on Sunday the 16th, the Mosaic Band is back at Steve’s. So we will fill up the house with some fun Christian, Soul, Funk, and Jazz music with our 13 piece band!!!

Our February Wine Club wines are coming in this week and we will kick off the new month of tasting this Friday at 5pm. So come out and join us this weekend for some great wines and discussion. We will once again host our “First Tasting Sunday” event for our club members and guests the afternoon of the 9th which includes some snacks and tasty treats to enjoy during your tasting. Our wines this month were chosen to support our friends from down under. We have 9 wines from Australia and New Zealand for this months featured club wines.

Don’t look for the term “boutique winery” in the dictionary — it’s not there! But most wine enthusiasts can agree that the boutique image includes a passionate artisan vineyard (perhaps family-owned), a fiercely individual and unique style, and limited production.
When you look at their passion for creating special small batch wines, you will agree, this is a team of people who take a boutique approach to their wine.

TYLER RUSSELL
It all started for Tyler (a California native) while working in a wine shop in Upstate New York. While stocking shelves and conversing with customers about wine, Tyler quickly discovered that he had a role to play in this industry.
In his early 20’s, Tyler packed his bags and headed to Paso Robles to pursue his dreams. It didn’t take long for him to get a tasting room gig at Dover Canyon Winery where he was shown the ropes of the trade, honing his knowledge while performing any job big or small. After Dover Canyon Tyler began methodically crafting his winemaking and cellar skills at other Paso Robles wineries including Justin, Zenaida and Calcaerous, while investing his spare time into his own project called Nelle Winery which produced its first wines in 2008.
In 2014 Tyler joined forces with business partner David Taylor to create Tyler David Wine Works, which continues the Nelle label and also created the Cordant Winery label.
We will be tasting 5 of Tyler’s wines at this event.
The 2016 Cordant Central Coast Pinot Noir boasts loads of fresh potpourri, pomegranate cherry, Palo Santo, and leather on the nose. The nose is confirmed on the palate with added Earl Grey and dried orange peel. Perfectly in balance, this wine is soft and elegant.
WINEMAKER NOTES: Sourced from a selection of vineyards in Santa Lucia Highlands, Santa Rita Hills, and Edna Valley, where each site is picked at optimum ripeness determined by taste.
340 Cases produced. Cellar potential 6-10 years.
The 2016 Nelle Grenache is a blend of several Central Coast Grenache vineyards from Paso Robles and Santa Barbara County. It is rich and savory, with a beautiful herbaceous quality, as well as caramelized fig, black olive, black pepper, fennel and purple-flower flavors. This wine will easily seduce you into finishing the whole bottle.
267 cases produced. Cellar potential 10-12 years.
The 2016 Nelle Syrah is a blend of several Central Coast Syrah vineyards, from Paso Robles, Monterey County, and Santa Barbara County. Blending vineyards that include both cooler climate and warmer climate characteristics, this Syrah is dense and robust. Flavors of A&W Root Beer float, warm vanilla bean, campfire, espresso, scorched earth, and river mint. This wine will continue to develop beautifully over the next 3+ years.
434 cases produced. Cellar Potential 8-10 years.
The 2016 Nelle Coastview Vineyard Syrah – The Coastview Vineyard is located in the Gabilan Mountains in Monterrey County. Elevated 2000 feet above the Salinas Valley, it is planted in decomposed granite and veins of limestone. This Syrah is full of deep meat complexity and the aromas are fresh and fruity in its youth. This Syrah is bright with inky dense blackberry, Asian plum, fresh ground black pepper, dried lavender and silky tannins. It is balanced and shows great aging potential.
98 cases produced. Cellar potential 8-12 years.
The 2016 Nelle Maniacal - Paso Robles - Grenache takes the spotlight in this blend "GSM" showcasing beautiful blue and black fruit flavors. On the mid-palate, Syrah shows its pretty little face in the form of roasted coffee, meat, and pencil shaving. The finish is longer than this tasting note and leaves a lingering taste of purple violets and lavender.
50% Grenache, 35% Syrah, 15% Mourvèdre

Just in time for Valentine's Day, we have added some new chocolates to our line of products. These are spirit filled (cognac) and wine filled (cabernet) chocolates made right here in Texas! We also have 1/2 lb boxes of Dark Chocolate Bark to enjoy with you wine.
We have the Cabernet filled chocolates as individual tastes or a 6 pack box to share (or not). We also have the French Cognac filled chocolate as individual serving at this time.
Come and try these out and let us know if you would like us to expand our options to include other spirits and flavors.
Our provider is Quintessential Chocolates, which specializes in the centuries old art form of casting “Liqueur Praliné” or the European style Liquid Center Chocolates (“with a sugar crust”). "The process we use is more than 200 years old. To our knowledge, we are still the only manufacturer of this specialty confection in America and we have been creating these chocolates since 1984".
Europeans primarily make Brandy filled chocolates. Since Americans do not typically drink Kirschwasser as a rule, they created liquid center chocolates filled with premium spirits, wines, coffees and fruit nectars…flavors that cater to American tastes. "We may have been the first company worldwide to create such a wide spectrum of wine varietals and may even be the only manufacturer in the world to create non-alcohol liquid centers in this manner made with coffees and fruit nectars".
These confections are all handmade in the traditional centuries-old method. They cast the liquid centers into freshly made cornstarch molds. In this process, sugar crystals literally lock together, forming a crystalline shell only a few sugar crystals thick. This forms an edible moisture barrier to prohibit the chocolate from pulling the flavor, and the alcohol out of the liquid center (or allowing it to evaporate through the wall of chocolate). Because of this, you truly do have a large volume of liquid inside a very thin chocolate shell. You must place the entire product within your mouth or your chin may have all the fun!
The other exciting aspect of this sugar shell is the way it actually enhances the flavor within. Just as sugar on sliced strawberries will bring out the flavor, this sugar shell intensifies the liquid flavor. It is so good at this that you can do a taste test between two bourbons – a sour mash and a straight – and you will be able to distinguish the difference. You can even tell the difference between two straight bourbons, where one is a 10 year old handmade Kentucky bourbon.
"It is so distinctive that we have even had Vintner’s identify the wine within the chocolate and the Vineyard!"
From start to finish the process takes 3-5 days to complete. Because the wines, coffees and nectars have more suspended solids (pectins, botanicals, etc) within, they can get in the way of the sugar shell formation. When they get in between the sugar crystals bonding to sugar crystals, then it makes for a more fragile shell. These products will actually require additional time and these suspended solids can also effect shelf-life. Once the liquid capsules are formed, all of the cornstarch is removed, then the capsules are enrobed (literally covered) in rich dark chocolate.
Now that you know how it's done, it's time to stop by Steve's and give them a try!

What a week last week! The wine club kicked off with a bang! We ran out of two of the wines over the weekend. No worries though, more cases are on order, but we certainly found a couple of winners right off the bat. I’m not going to spoil it for you on which two were the hot ones. You will have to come in and check it out for yourself. 😉
We also finalized the lease on the new location. The new spot is 111 Industrial between Roosters and Tex-Tapas. There is a lot of work to be done on the facility before we can move in, but for those who have been asking, I’d like to say that we will hopefully fly through (crossing fingers) with all our permitting, work, and set up and be able to start hosting guests there early November.

This weekend September 13th – 16th is Grapefest in Grapevine. If you are attending, please wear your Steve’s Wine Bar t-shirt and take selfies at the event. Post them to Facebook, Instagram, and Twitter and tag us showing you are at the fest. If you don’t have a Steve’s Wine Bar t-shirt, we have them at the bar for you to pick up. We’ll be thanking you with a bit of complimentary wine for sharing your pics online. 😊 So, stop in soon after to grab a beverage on us from our regular wine and beer menu.
October 20th is the Industrial Street Pop-Fest
October 27th is the Day of the Dead Fest
Both are happening right outside our front door! So plan your weekend accordingly when it comes to your club tastings that month. If all goes well with the new place, we may throw open the doors there for people to hang out and enjoy their beverages those two weekends.

August 5th, 2016 was the beginning of Steve's Wine Bar in historic Downtown Denton, TX. Since that time Steve's has been voted as one of the best wine bars in Denton County and THE bar for jazz in Denton by the Denton Visitors Bureau. Come out and join the team this weekend as we roll out specials on beverages by the glass, by the bottle, and our new T-Shirts. We will be extending our hours on Sunday August 5th with a special performance by Carlos Averhoff and his quartet that evening 7 - 9pm.
